The best food I've ever had in Panama, with familiar flavors and local ingredients you won't find anywhere else (like a mini soft shelled crab normally used as bait). MUST GO. (& sit at the chef's table & have cocktails). Jose is opening a new three story restaurant in July '17 with a food lab, a catering business, and a casual Panamanian restaurant to be called "Lo Que Hay"
