Jair Tellez opened a restaurant in the unlikeliest of locations - and helped put Valle de Guadalupe on the culinary map as a result. His mix of fine dining training, romantic vision of local produce and dogged resourcefulness make for what looks like a simple, elegant seasonal menu. Definitely want to go.
